Ingredients
1 cup basmati rice
500g Chicken thigh or tenderloin
1 cup Chicken or Vegetable Stock (salt reduced)
2 Carrots
1/2 an Onion
2 cups Pumpkin (diced)
1 tsp Garlic
1-2 tsp Curry Powder
1 tsp olive oil
Method
This recipe requires a slow cooker, however you can adapt this to cook on a stovetop.
Heat slow cooker & add olive oil
Dice carrots, onion and pumpkin
Add all ingredients (excluding rice) to the slow cooker
Cook on HIGH for 4-5 hours or LOW for 7-8 hours.
Stir every hour, chicken will fall apart as it cooks.
Cook rice. Ensure you rinse/wash well before cooking.
Either serve rice with cooked curry or mix through before serving.
