Ingredients
2 large over ripe Banana’s
1 Egg
1 Cup Oat Flour (blend wholegrain rolled oats to create a flour)
1 Tsp Baking Powder
1 Tbsp liquid Coconut Oil
2 Tbsp natural Maple Syrup
40g Vanilla Protein Powder (optional)
Pinch of Cinnamon & Nutmeg
2 drops of Vanilla extract
Method
Mash Banana’s in a bowl and combine with all wet ingredients.
Add dry ingredients & mix well.
Grease muffin tray with coconut oil.
Distribute mixture evenly between 6-8 muffins.
Bake on 180degrees (fan forced) for 25-35 minutes until cooked.
Muffins are cooked when golden & knife comes out mostly clean
Allow to cool before serving
