Ingredients
1 cup basmati rice
1/4 green capsicum
1/4 red capsicum
4 small mushrooms
1/2 an onion
3 eggs
3 drops sesame oil
dash of soy sauce
1 tsp garlic
Method
Cook rice. Ensure you rinse/wash well before cooking and then allow to cool once cooked.
Finely dice onion, capsicum and mushroom.
Scramble/fry 3 eggs and set aside once cooked.
In a large pan, fry garlic & veggies until softened.
Add egg and cooled rice
Add sesame oil & soy sauce.
Mix and fry for 1-2 minutes.
Serves 2-4
