Ingredients
5 whole eggs + 3 egg whites
1/3 cup milk (regular or almond milk)
1/2 a red capsicum
1 small zucchini
1 tomato
Cheese (parmesan or tasty)
Dried basil
Method
Grease a baking dish with olive oil.
Whisk in a bowl eggs and milk.
Slice zucchini, tomato and capsicum, then layer into tray.
Pour egg mixture onto vegetables, season with salt, pepper and basil.
Bake on 180degrees (fan forced) for 30 minutes until cooked through.
Serves approx 3-4
