Ingredients
500g lean beef or pork mince
1 cup basmati rice
2 mushrooms
1 brown onion
1/2 a red capsicum
1 can of kidney beans
2 cans crushed tomato
1 tsp minced garlic
cumin powder
smoked paprika
optional: chilli flakes
Method
Dice capsicum, onion, mushroom
Fry the above with garlic + olive oil for 1-2 mins
Add mince and cook until browned
Drain and rinse kidney beans well
Add beans, tomato and continue to cook
Add cumin + paprika to taste preference
Cook rice
Serve rice on the side or mix through
