Ingredients
1 can Brown Lentils
250g Cherry Tomatoes
1/4 Cup Chopped Walnuts
1 Small bag of Baby Spinach
50g Light Feta Cheese or Goats Cheese
Your Choice of Protein (grilled Chicken, Boiled Eggs, Tofu)
Method
Drain & rinse Lentils
Chop Cherry Tomatoes in halves
Cook protein choice
Combine all ingredients in a bowl and mix
Dress with Balsamic Vinegar or Olive Oil & Lemon Juice
Serves approx 2-3
