Ingredients
500g Lean Beef or Pork Mince
2 cans Crushed Tomatoes
1 Zucchini
1/2 a Red Capsicum
5 Mushrooms
1 small Brown Onion
1 Carrott
1 Tbsp Olive Oil
Dried basil
1 Tbsp crushed Garlic
Wholemeal Pasta
Method
Grate Zucchini & Carrot
Chop Mushrooms, Capsicum & finely dice Onion
In a large pan, cook onions & garlic in olive oil for 1-2 minutes
Add Mince & cook until brown
Add all vegetables & canned tomatoes
Add basil
Add small amount of water if needed.
Simmer for 15-25 minutes or until cooked through.
Serve with wholemeal pasta or basmati rice.
