Ingredients
2 Skinless Chicken Brest
1 Large Leek
4 Carrots
4 Celery Sticks
2 Zucchini’s
4 Small Potatoes
1L Chicken or Vegetable Stock (salt reduced)
3 Cups Water
Fresh Parsley
Method
Chop all vegetables into small cubes or slices
In a large pot, add stock and 3-4 cups of water
Add vegetables and bring to boil
Add x2 whole raw Chicken breast and bring to boil again
Add Parsley, then cover and simmer for 60-90 minutes.
When chicken is cooked through, shred through soup with a fork and allow to simmer for a few more minutes.
Serves approx 3-4
